Abstract
Roasting is one of the most critical stages in coffee processing due to the chemical and physical changes that green coffee beans can undergo, which affect the quality of the beverage. This work is aimed to demonstrate the potential of a metabolomic platform based on the use of liquid chromatography coupled to high resolution mass spectrometry to evaluate the coffee roasting process.
